Proper hygiene can prevent contamination of ingredients, products, and packaging. All employees must follow the rules below for working in food storage areas:
- Come to work clean
- Keep fingernails trimmed and clean
- Avoid touching body parts, including hair, nose, arms, eyes, etc. If hands become contaminated, wash them
- When coughing or sneezing, turn away from food, ingredients, packaging materials, and food contact surfaces
- Use the crook of the elbow or shoulder to sneeze into.
- The following is prohibited in any storage and packing areas:
Food, drink (with the exception of water in a clear container with lid seal to prevent leaks), smoking, chewing gum, tobacco, spitting, and medication. These actions and items are only allowed in designated areas – outside or the company break room.
- Personal items with the exception of mobile phones used for business purposes
- Loose items in shirt pocket or other clothing pockets that can fall out (e.g. pens, thermometers, etc.)
- Do not store waste on or near areas listed above
- Do not store ingredients or materials directly on the floor
- Hand Washing
- Pre-rinse hands with clean water
- Apply soap
- Rub hands, fingers, nails, and wrists to for form a lather for a minimum of 20 seconds
- Rinse hands with clean water
- Dry hands hygienically (disposable paper towels)
- A poster with hand washing instructions is located by the hand washing sink
- Frequency
- All employees must wash their hands:
- After using the washroom
- After eating or smoking
- Every time hands become contaminated
- Clothing, Footwear, and Headwear
- Employees must wear clean clothing that is designed for the operation to prevent contamination of food ingredients, packaging, and food contact surfaces. In addition, they must do the following with clothing:
- Keep in good repair – no holes, loose threads, loose buttons, etc.
- Keep shoes clean inside the facility
- No open toed shoes allowed.
- Injuries and Wounds
- Report all incidents to management immediately
- Apply first aid immediately
- All open wounds must be properly covered (e.g. waterproof bandage covered with a glove)
- When injury is reported, thorough investigation must be made on products near the injury site to determine if food, ingredients, packaging materials, and food contact surfaces have been contaminated.
- Any contamination will be reported to Tate and Lyle to determine product viability.
- Access and Traffic Patterns
- Access and traffic patterns can control the movement of employees, visitors, products, ingredients, and packaging materials to reduce cross contamination. The following rules apply throughout the facility:
- All visitors must sign the visitors log book, located at the driver/visitor check in room before they are allowed into the facility.
- Employees and visitors must use specific entrance and exit doors at specific times of day. The entrances are clearly labeled for employees and drivers.
